As I mentioned in yesterday’s post, this homemade apple compote was inspired by Peanut Butter Fingers’ Crock Pot Challenge, which involves trying 10 new crock pot recipes before the end of February.
I didn’t follow any recipes and almost have a hard time calling it a recipe myself. However, because it is not only tasty and healthy (very low in added sugar), but also ridiculously easy and incredibly versatile, it totally deserves it’s own special post!
Homemade Apple Compote
Ingredients:
6 firm sweet apples (i.e. Braeburn)
1 tbls turbinado sugar (or brown sugar works too)
1 tsp cinnamon
1 tsp real vanilla extract
Directions:
1. Chop apples into bite-sized pieces and place into crock pot heated to high.
2. Sprinkle sugar, cinnamon, and vanilla over the top.
3. Cook on high for about 3 hours or until apples have reached desired softness, stirring occasionally.
Use as a topping on yogurt for breakfast.
Serve warm over vanilla ice cream.
Eat plain, warm or cold.
Puree for a homemade cinnamon applesauce.
For a more traditional (yet healthy!) apple crumble dessert, place in ramekins, sprinkle granola and walnuts over the top, and bake in the oven till topping gets nice and crispy.
